Flavor profile
avg. of 3 published reviewsScale: 1-10, Coffee Review / SCA-classic-form convention. Averaged from 3 Coffee Review scores of single-variety Colombian Wush Wush lots: Colombia Wush Wush (SkyTop Coffee, July 2021, honey process, Hacienda La Pradera, Santander), 94 points; Colombia Wush Wush Dynamic Natural (SOT Coffee Roaster, May 2022, fermented natural, Finca La Foresta, Huila), 95 points; and Paola Trujillo Wush Wush (JBC Coffee Roasters, anaerobic natural, Caldono, Cauca), 95 points. Coffee Review publishes attribute scores as whole numbers, so the one decimal comes only from averaging. Small-N and not category-wide: three different farms and three different processes, so scores reflect individual lots and roasters, not the variety as a whole.
What it tastes like
Wush Wush is an Ethiopian-derived variety that Colombian farms have only recently planted, and Coffee Review describes it simply as Ethiopian-derived Arabica. Roasters pitch it as a rare heirloom from coffee’s ancestral homeland, which is marketing language rather than a documented pedigree, so read provenance claims on a bag with that in mind.
The cup is perfumed more than it is heavy. A honey-processed lot from Santander scored 94 on bergamot, lilac, pink peppercorn and plum with a syrupy mouthfeel. An anaerobic natural from Cauca reached 95 on guava, jasmine and blood orange zest, and a yeast-fermented natural from Huila also scored 95 with black cherry and lemon verbena.
All three lots score 9 across aroma, flavor, acidity and body, with aftertaste the only attribute that moves (8 for the honey lot). What separates them is the processing: honey leans spiced and caramelized, while the fermented naturals push toward tropical fruit and wine. That makes Wush Wush a variety where the process on the label matters as much as the name.
How to brew it
Method fit for this origin · editorial guidance from roaster convention
Filter brewing is the usual way roasters present delicate, floral lots, and it keeps the jasmine and citrus top notes reviewers single out.
The syrupy body suits espresso, but the lively acidity and fermented-fruit lots can taste sharp or winey without a careful dial-in.
Immersion tends to flatten the perfumed aromatics that are the main reason to buy a Wush Wush.
⚠ Fit tiers are editorial guidance drawn from roaster convention; no industry standard scores brew fit, so we show tiers, never invented numbers. Editorial judgment based on common specialty roaster practice for floral, light-to-medium roasts, not an SCA-defined standard.
