Ethiopia Yirgacheffe Natural
Ethiopia Yirgacheffe Natural, the sun-dried take on a famously washed origin, with three averaged Coffee Review scores, altitude and harvest timing.
Flavor profile
avg. of 3 published reviewsScale: 1-10, Coffee Review / SCA-classic-form convention. Averaged per attribute from 3 independently published, dated Coffee Review scores of natural-process Yirgacheffe lots (2018 to 2019, two roasters in the US and one in Taiwan), rounded to one decimal. Not a category-wide statistical sample: overall scores of these three lots run 93 to 96, and individual lots vary with farm, harvest and roast.
What it tastes like
Natural Yirgacheffe is the same high Gedeo Zone terroir as the washed lots, but the cherry is dried whole instead of being pulped and rinsed, and the cup shifts accordingly: less tea-like and citric, more berry, more sweetness, more weight. Where washed lots are the textbook for clean and floral, naturals lean fruit-forward and syrupy.
The three cited Coffee Review lots point the same way: strawberry and pineapple guava in one, ripe blueberry and dark chocolate in another, mulberry with jasmine and baking spices in the third. Body scored 9 on all three, and florals still show up (lavender-like, jasmine) despite the fruit. The scores here are an average of those 3 lots, so treat them as a sketch of the style, not a promise for any bag.
Timing matters if you buy fresh. Per Ethio Coffee, natural lots take roughly 4-6 weeks longer to dry than washed ones, so they reach export later, with shipments typically from March through May. Naturals are also less predictable lot to lot, so choose a roaster that names the farm or washing station and the roast date.
How to brew it
Method fit for this origin · editorial guidance from roaster convention
A paper filter keeps the berry and floral notes legible while trimming some of the syrupy weight natural lots can carry.
The sweetness and fruit intensity suit espresso, but natural lots can be less consistent from bag to bag, so expect extra dialling in.
Immersion emphasizes the plush body, though it blurs the floral top notes that are a large part of the appeal.
⚠ Fit tiers are editorial guidance drawn from roaster convention; no industry standard scores brew fit, so we show tiers, never invented numbers. Reflects brew guidance commonly published by specialty roasters for natural Ethiopian lots, not an SCA-defined standard.
Altitude & region
Growing elevation, meters above sea level · this entry vs comparison bands
The Yirgacheffe range is sourced directly from Ethio Coffee's origin altitude table (see Sources & data). Kenya AA and Brazil Cerrado are shown for scale only, using the same commonly published bands as the washed Yirgacheffe entry, not lot-specific measurements.
Caffeine content
Caffeine by dry weight · each gold dot = 0.1%
Caffeine content tracks species, not origin, altitude, or processing: Robusta beans contain almost twice as much caffeine as Arabica (see Sources & data). This entry is 100% Arabica, and natural processing does not change that; no credible per-origin caffeine figure exists at a category level.
